Meet the Team

  • Peter Brandes

    OWNER

    Peter moved to Colorado in 2010 to attend CU Boulder and quickly fell in love with the outdoors. Already an avid skier and camper, he dove headfirst into Colorado’s outdoor scene—climbing, hiking 14ers, and trail running. He even swapped his motorcycle for a gravel bike from the very shop that once occupied this space, commuting and riding to adventures throughout RMNP and the Indian Peaks Wilderness, all from his home in Niwot under his own power.

    Peter spent years in the service industry—starting as a dishwasher and working up to managing two restaurants—before becoming a teacher. After five years in education, the chance to take over the Wheel House felt like the perfect way to combine his love for endurance sports and his passion for community. He's excited to continue building a space where friends, family, and neighbors can connect for years to come.

  • Cornelia Sawle

    OWNER

    Cornelia Sawle is a longtime Niwot resident, community advocate, and co-owner of The Wheel House. Deeply connected to the town she calls home, Cornelia has spent years supporting local businesses, community events, and organizations that help make Niwot a vibrant place to live, work, and gather. She has served in leadership and advisory roles within the community and is passionate about preserving the welcoming small-town spirit that makes Niwot unique.

    As co-owner of The Wheel House, Cornelia has helped transform the space into more than just a bar, restaurant, and bike shop—it’s a hub where neighbors, families, cyclists, runners, and friends can connect. From overseeing day-to-day operations to helping shape the vision for the business, she brings energy, creativity, and a genuine commitment to hospitality.

    Whether she’s welcoming guests, organizing events, or working behind the scenes to create memorable experiences, Cornelia believes that great communities are built around gathering places where everyone feels at home. That philosophy is at the heart of everything she does at The Wheel House.

  • Brandon Thomason

    BIKE SHOP MANAGER

    Raised in Colorado, bikes have always held a special place in Brandon’s life. As a bike commuter and avid “bikepacker”, becoming a professional bike mechanic felt like a natural progression. He’s passionate about caring for bikes, knowing how much joy and confidence a well-tuned ride can bring. Creating an inclusive and welcoming space is central to his mission of growing the cycling community.

    To Brandon, bikes are the ultimate multipurpose tool. Whether it’s riding through the neighborhood with a friend, venturing into the foothills for an overnight adventure, or simply commuting to work and picking up groceries—bikes make it all possible. It’s this versatility, and the wide-reaching community that comes with it, that fuels his excitement to help more people get outside. Whatever inspires someone to hop on two wheels, he hopes to see them out there.

  • Justin Hirschfield

    HEAD CHEF

    Justin Hirschfield has been a fixture in the Boulder County culinary community for more than three decades. A Colorado native, Justin began his culinary career at just 16 years old with the renowned Laudisio’s Ristorante, where his talent and dedication eventually earned him advanced culinary training in Italy and the opportunity to become one of the youngest head chefs in the region.

    Over the years, Justin has helped shape some of Niwot’s most beloved dining experiences, spending more than a decade at Niwot Market before leading the kitchen at 1914 House as Executive Chef. Known for his creative approach, commitment to quality ingredients, and ability to make guests feel at home, Justin has earned a reputation for delivering exceptional food with warmth and authenticity.

    At The Wheel House, Justin brings his passion for community-driven hospitality and approachable, chef-crafted cuisine to every plate. Whether preparing a casual lunch, a post-ride meal, or a special event menu, his goal remains the same: create memorable food that brings people together.
